This is a very complete book with a wealth of information about sourdough, its history, health benefits, vocabulary. In fact, it is almost a treaty on sourdough. The recipes are well explained and cover the making of the starter and a variety of bread recipes. It also has spiked dough recipes as well as a gluten free starter and bread recipe. It is also nice to find a number of ideas of what to make with the starter discard, as it seems always a pity to throw it away. It is a cookbook without pictures, which is very unusual and some pictures would have been helpful to show how starter should look like for example. But it remains easy to follow for sourdough bakers of all levels.
